1-min Microwave Mug Cake

I always think twice before planning to bake a cake, as...
  • It takes too much in following exact proportions n procedure to follow :(
  • That comes to be too-big cake for just 2 of us!!!
And so I usually prefer muffins or cupcakes in my baking sessions! While referring pages of food-blogs, I found a microwave version of chocolate cake somewhere... and thought of trying it out. I found it quite an easy thing to do, but when I entered in my kitchen... found an empty pack of cocoa powder :( A thought of making it there n then got vanished in a minute :( :( :( 

Got a new pack of unsweetened cocoa n then planned to try it out!!! Unfortunately, this time I didn't have a scoop of vanilla to pair up with this mug :P Anyways, I enjoyed it like anything.... 

Off you go with the recipe... 


ALL WHAT I HAD:

2 tbsp Plain Flour
1/2 tsp Baking Powder
1/8 tsp Baking Soda
2-3 drops Vanilla Extract
2 tbsp Caster Sugar
2 tbsp Cocoa Powder (unsweetened)
1 tbsp Chopped Walnuts
2 tbsp Oil
2 tbsp Water
A pinch of Salt

THIS IS WHAT I DID:

- Mix everything in a bowl.
- Pour it in a microwave safe glass/mug.
- Microwave on high for a 1½ mins. 
- Eat when it's hot!!! :)


SJ's NOTE:

- Addition of chocolate chips will give an extra crunch :) 
- A scoop of vanilla ice cream is always great to serve with this quick cake!!!

Microwave Rava Idli

Yeyyyy.... Finally!!! I'm posting my 1st South-Indian dish :) A healthy option of 'Rava Idli' for South-Indian Food lovers!!! Given here is a recipe of Microwave version, which is quite quick and almost effortless... You can make it using a normal Idli Steamer too.

Try out these colorful looking breakfast dish... :) 


Makes: 12-15

INGREDIENTS:

For Batter--

1 cup Semolina
1/4 cup Yogurt
1 tsp Chopped Coriander
1 tsp Chopped Onion
1 tsp Chopped Carrots
1 tsp Chopped Capsicum
1/2 tsp Fruit Salt (Eno)
Salt, to taste
3/4 cup Water

For Tempering--

1 tsp Cooking oil
1/4 tsp Mustard Seeds
1/4 tsp Cumin Seeds
A pinch of Hing
1/2 tsp Urad Dal
1/2 tsp Chana Dal

METHOD:

- Take all the ingredients of batter in a big bowl and mix them well.
- Add a tbsp of water at time if it needs more to make a batter with pouring consistency.
- Heat oil in a small pan (tadka-pan) and add urad dal, chana dal and mustard seeds into it.
- Once dal are golden-brown in color and mustard seeds splutter, add cumin seeds and hing.
- When it stops crackling, pour this to batter. Mix lightly.
- Grease microwave-proof idli plates. Microwave 1/4 cup of water on base plate of idli maker.
- Pour a tablespoon full of batter into each idli mould and arrange on base plate.
- Cover it with a lid and microwave it for 4 mins.
- Take them out and serve hot!!! 

SJ's NOTE:

- If not using microwave idli maker, it can be steamed using regular stand too. You need to steam it for approx 10 mins.
- Add your favorite veggies while making batter...

Microwave Nylon Khaman

Thought of starting a new series on Food Court - "Under 30 Mins"!!! And here is the first recipe... A very popular Gujarati delicacy "Nylon Khaman". 

Traditionally, its prepared in steamer which takes a little longer to have it ready on plate. But for those who loves it, but refrains from making it 'coz of its method to follow... I tried making it using microwave and it turned out to be a super-successful experiment. It was so spongy and yummy!!!


Ready to serve in: 12-15 mins
Makes: 10-12 pieces

INGREDIENTS: 

For Khaman--

1 cup Besan (Chickpea Flour)
2 tbsp Sooji (Semolina)
1/8 tsp Turmeric Powder
2 tsp Sugar
2 tsp Lemon Juice
1/2 tsp Ginger-Green Chillies Paste
1 tsp Eno Fruit Salt
1 cup Water
Salt, to taste

For Tadka--

1 tbsp Oil
1/4 tsp Mustard Seeds
1/4 tsp Sesame Seeds
A pinch of Hing (Asafoetida)
3 tbsp Water

Chopped Coriander, for garnish

METHOD:

- Take all ingredients (except Eno) of Khaman in a bowl and mix them well.
- Add water gradually to make smooth batter of pouring consistency with no lumps present.
- Grease a deep microwave proof dish (or baking tray) with 2-3 drops of oil.
- Add eno fruit salt to batter and whisk it for 2-3 mins to make the batter fluffy.
- Pour it to a tray and cover it with cling wrap.
- Microwave it on high for 4-5 mins and take it out removing cling wrap. Let it rest for 5 mins and then cut into pieces.
- Transfer all the pieces to serving plate/bowl.
- Heat oil in tadka (tempering) pan and add mustard seeds. Once it splutters, add sesame seeds and hing into it. Turn off the heat and add water.
- Pour this watery tadka over all khaman evenly.
- Garnish with chopped coriander and it's ready to serve!!! 


SJ's NOTE:

- Citric Acid (limbu na phool) can be used to replace lemon juice.
- Make sure cling wrap doesn't touch your khaman at all. A microwave proof lid can be used instead.
