Breadcrumbs

An effective use of left-over breads or bread sides for making breadcrumbs at home!!! Try it out...


METHOD: 

- Cut them into pieces and arrange all the pieces in a baking tray.
- Keep it in preheated oven for 6-8 mins on 160 degrees.
- Cool it down to room temp and grind to make a course crumbs.
- Store in an air-tight container.

Key to use: 

1. Prepared breadcrumbs serves the best as a "Binding Agent" for any kebabs or tikkis.
2. It can be used just as a coating for them to get crunchiness while frying (shallow/deep).

Strawberry Panna Cotta


MAKES: 2

INGREDIENTS:

1/2 cup Full Cream
1/2 cup Milk
1/2 cup Caster Sugar
1/4 cup Strawberries (chopped)
1 tsp Gelatin (Agar-Agar powder/flakes, for core-vegetarian)
5-6 tsp Water

METHOD:

- Take full cream, milk and sugar in a pan and bring to the boil (around 4-5 mins) it on medium-heat.
- Turn off the heat and add chopped strawberries.
- Mix gelatin with water and add it to cream mixture.
- Transfer the prepared mix in ramekins or silicone moulds and cool it down to the room temperature.
- Keep it in the freeze to set for 4-5 hours and serve chilled.

SJ's NOTE:

- Unmoulding them is optional.
- Take 2-3 chopped strawberries and caster sugar in pan with 2-3 tsp water. Cook it for around a minute and drizzle on the plate while serving.
- Can be served with butter cookies or fresh strawberries.

Home-made Tortillas

Why to buy ready-to-use tortillas when it's quite easy n quick to make at home? Turn your routine meal into something special with these wraps or transform your tiffin into a treasure box! :)


Makes: 4-5

INGREDIENTS:

2 cups wheat flour (plain flour or combination of both is always an option)
1 tsp salt
4 tsp cooking oil
1/2 cup water
2 tsp baking powder

METHOD:

- Mix wheat flour, baking powder and salt in a bowl.
- Add 3 tsp of cooking oil into it and mix well to make crumbles.
- Add your flavor in it and mix well.
- Knead a soft dough using lukewarm water.
- Divide the dough in 4 balls and roll them out in thin chapati.
- Cook them on flat tawa for a min or two on both the sides.
- Cover all tortillas with a damp kitchen towel to keep them soft.
- Use these wheat-based tortillas to make varities of wraps!

SJ's NOTE:

You can make tortillas with your magical flavor! Few of my choice...

1. Garlic and Herb - Crush garlic cloves and any herbs of your choice with few drops of olive oil.
2. Cinnamon n Sugar - Mix of cinnamon powder (a pinch) and caster sugar.
3. Spinach - Fresh/frozen spinach puree
4. Lemon n Black pepper - Mix black pepper powder in lemon juice.
5. Tomato and Basil - Blend tomato and basil in mixture using water.

Falafel Wrap


INGREDIENTS:

1 cup chickpeas (kabuli)
1/2 cup chopped parsley
2 tsp chopped coriander
1/2 cup chopped onion
2 garlic cloves
1/2 tsp roasted cumin seeds
1/2 tsp coriander powder
Salt to taste
1/4 tsp black pepper powder


1/2 cup yogurt
1 tsp mustard sauce
1 tsp tomato ketchup
8-10 tomato slices
8-10 cucumber slices

METHOD: 

- Take chickpeas in a bowl full of lukewarm water and soak it overnight.
- Drain them and pressure-cook them for 4 whistles. Drain it again and allow to cool for half hour.
- Combine chickpeas, parsley leaves, garlic cloves, chopped onion, coriander leaves, cumin, salt and pepper in a bowl and mash them all together. (Add cornflour if required)
- Alternatively, mixer grinder can be used to make a thick mixture for balls. 
- Divide the mixture into small balls and flatten them a little.
- Arrange them in lined baking tray, drizzle some oil over them and bake them in preheated oven for 25-30 mins on 200 degrees.
- Take a wheat tortilla and apply yogurt mix onto it. 
- Arrange tomato and cucumber slices and place 2-3 crisp and hot falafel tikkis on it. 
- Fold it a wrap style and roast it on flat-tava with few drops of oil. 
- Serve hot with tomato ketchup. 

SJ's NOTE:

It makes a healthier version of core-mediterranean "Falafel in Pita Bread"... 

- Using wheat flour wrap is a good option than using plain flour wraps.
- Given here is a recipe for oven-baked Falafel (rather than deep-fried), which is a made of chickpeas - a good source of protein.
