Orange Cupcakes

A very dear friend of mine delivered a 'Baby Girl' on 1st of this month! This calls for a grand celebration... First of all, heartily congratulations to a lovely couple 'Hit & Raj'... :) Although I'm not there, you guys owe us a big party whenever we visit!!!

They named her "RAHI" (cute name, isn't it?)!!! Right after seeing the pics I found that she'll be a big-time blabber-box like Hit, she totally resembles her dad though :P

This one is for a baby princess who's now a week old!!!


Makes: 4

INGREDIENTS:

1/2 cup Self-rising Flour
1 tbsp Curd
1/4 cup Caster Sugar
1 tbsp Orange Pulp
2 tbsp Orange Juice
1 tbsp Cooking Oil
Salt, to taste 

STEPS TO FOLLOW:

- Mix curd, caster sugar and orange pulp in a big bowl.
- Sieve self-rising flour in the same bowl (If using plain flour, add a tsp of baking powder and a pinch of baking soda into it).
- Add orange juice, salt and cooking oil in it. Mix everything well to make a mixture little fluffy. 
- Pour the mixture in greased muffin tray.


- Bake it in preheated oven on 180 degrees for around 25-30 mins.
- Decorate with whipped cream and a chunk of orange pulp before serving!
